Mango Walnut Spinach Salad

Ingredients

  • 1/2 pound baby spinach

  • 2 cups baby kale

  • 1 lb mixed spring salad mix

  • 1 small red onion sliced thin

  • 2 mangos peeled, seeded and cut into strips

  • 1 cup fresh blackberries

  • 1/2 cup rough chopped walnuts toasted

  • 2 ripe mangoes peeled, seeded and puree in blender to make 1/3 cup

  • 2 tbsp fresh squeezed orange juice

  • 1 tbsp fresh squeezed lime juice

  • 2 tbsp apple cider vinegar

  • 2 cloves garlic minced

  • 2 tbsp extra virgin olive oil

  • 1 Tbsp honey

  • 1 tsp sea salt

  • 2 tbsp chopped fresh parsley

Directions

  • Toast walnuts in a small skillet over medium/high heat for 3-4 minutes until lightly browned. Place cooled walnuts and first 7 ingredients listed in salad bowl.
  • Purée mango and measure 1/3 cup. Add the last 9 ingredients listed (including mango) except chopped parsley to blender and blend until well mixed.
  • Pour dressing into a bowl and add parsley.
  • Drizzle dressing over salad and serve.
