Sprout Salad with Blueberries

Ingredients

  • 2 c sunflower or pea sprouts

  • 1/4 c sliced red pepper

  • 1/2 c blueberries

  • 1/2 c snow peas

  • 1 tbs dairy free pesto

  • 2 tbs lemon juice

  • 2 tbs hemp hearts

  • 1/2 tsp raw honey

  • sea salt to taste

Directions

  • Combine sprouts, red pepper, blueberries and snow peas in a large bowl.
  • In a small mason jar, add oil, pesto, lemon juice, honey and salt. Shake until well mixed.
  • Pour over salad and top with hemp hearts.
