Mango Walnut Spinach Salad

1/2 pound baby spinach
2 cups baby kale
1 lb mixed spring salad mix
1 small red onion sliced thin
2 mangos peeled, seeded and cut into strips
1 cup fresh blackberries
1/2 cup rough chopped walnuts toasted
2 ripe mangoes peeled, seeded and puree in blender to make 1/3 cup
2 tbsp fresh squeezed orange juice
1 tbsp fresh squeezed lime juice
2 tbsp apple cider vinegar
2 cloves garlic minced
2 tbsp extra virgin olive oil
1 Tbsp honey
1 tsp sea salt
2 tbsp chopped fresh parsley
Directions
- Toast walnuts in a small skillet over medium/high heat for 3-4 minutes until lightly browned. Place cooled walnuts and first 7 ingredients listed in salad bowl.
- Purée mango and measure 1/3 cup. Add the last 9 ingredients listed (including mango) except chopped parsley to blender and blend until well mixed.
- Pour dressing into a bowl and add parsley.
- Drizzle dressing over salad and serve.
